OOh! You should pick up "Moosewood Cooks At Home" - its has a green and blue cover, and the recipes are pretty simple, don't take too long, and they give you suggestions to pair things up. I love it, one of my favorite cookbooks! All their stuff is great, imho, but this one is also simple, and has some good pieces on how to stock a pantry. Also, there is the Italian Veg cookbook that Hope, Beth & I all love... but it can be a little harder to find.
